“Good technique + detailed recipes = great flavor and texture,” says Susie Middleton and she’s determined to make all this add up to satisfaction for you in the 75 exciting recipes for the soups, salads, pizzas, pasta, frittatas and more in The Fresh & Green Table. Although a few of the recipes use a bit of meat or fish for flavor, most of them are meat-free and loaded with green goodness. With hearty veggie-centric mains like Baked Penne with Silky Fennel in a spicy tomato cream sauce; Savory Cabbage, Apple, Onion and Gruyère Rustic Tart; and Grilled Zucchini, Bell Pepper, Goat Cheese & Grilled Bread Salad that brings together the taste of summer in a single bowl, you won’t miss the meat! I have been a fan of Susie Middleton from her recipes in Fine Cooking and was very excited to find this cookbook. I have made 4 of her recipes so far and they have all been amazing. I cannot say enough good things about the recipes except that my family couldn't eat them fast enough. Even my very supremely picky 8 year old devoured the Sweet Potato, Spinach and Caramelized Leek Gratin with Pecan Crumb Topping. The recipes I have made (gratins, tians and pilafs) do take some time to make - but the results are worth every minute. Fantastic.

So far I have only tried one recipe; the southwestern spiced butternut squash and apple soup. I am mad because she told me to cook the squash first then add the apple way later. My squash was falling apart while my apple was still crunchy and the whole thing took way too long to finish. The end result was just okay for me. I will try more but so far, I'm not impressed.
