I am an experienced cook, but I always learn something from Mark Bittman. And this cookbook is no exception; for example, Mark helped me overcome my fear (and lack of success) at cooking dry beans. This is a great cookbook for anyone and everyone. Buy one for a friend, but make sure you get a copy for yourself, too.

A really good first cookbook

This is a gift for my college daughter, a learning-the-basics cook. This book gives just enough realistic information to the beginning cook to get them started, covers basic equipment, has a photo of not only how each recipe looks, but also illustrates techniques, even what 'simmering' water looks like, for the beginning cook. It covers how to stir-fry and make curries in addition to cooking steak, roasts, chicken etc., cooking vegetables, soups, baking bread, a layer cake, apple pie, the traditional American basics and more. It shows how real cooking isn't limited by a recipe, but rather opened up by learning basic techniques. It encourages the creativity of the beginning cook by showing how to 'build flavors' according to personal tastes, and create daily menus. This is the only book a beginning cook would need to start on the daily journey of keeping oneself, and loved ones, well fed and eating at home. Once the 'Basics' are learned, the world of cooking is limited only through interest, time, ingredient availability, and budget, and more books or classes to increase one's home expertise. This book is a key. Get it to keep yourself or a loved one from dependence on cheap fast food chains.

Fantastic book

I have been cooking for many years and consider myself experienced. I learned something from this book! I bought it intending to give it as a wedding gift to a friend who doesn't cook much. I'm afraid she is not getting it!

If you are looking for gourmet or "intermediate" recipes, walk away from this book. The recipes contain in this book are mostly basic recipes, however, what I love about Mark Bittman is that he gives you ideas on adding ingredients and run with it.This book for me, is an excellent guide for cooking especially for beginners. I am not a beginner cook at all, however, I do find the tips and his guide to cooking useful, especially in making myself a better cook. The many, I meant, MANY, colored photos is such a great help too.
