Essentials for Pizza
• Use a heavy-gauge pan with sides for baking the pizza. Thin pans
don’t hold enough heat to sufficiently color and crisp the bottom of the pizza before the toppings dry out. And the pan has to have sides or oil might drip onto the bottom of the oven and create smoke or even flames.
• Don’t overdo the pizza toppings; limit them to three to four. Otherwise they will begin cancelling each other out and you
won’t taste the crust at all.
• Serve the pizza immediately after baking for best results.

What really stands out about Bake! is master baking instructor Nick Malgieri’s careful attention to detail—it makes baking an incredible variety of gorgeous sweet and savory treats easier than ever before. Malgieri explains in simple terms how different kinds of pastry dough should feel on your fingertips as ingredients are incorporated, why it’s best to use a heavy-gauge pan when baking pizza and many, many more considerations that can make a big difference when it comes to creating 125 breads, cakes, cookies, brownies and other delights worthy of a standing ovation. It’s a beautiful book, too, with tempting photos of everything from Fig & Raspberry Croustades and Danish Cheese Pockets to Spinach & Bacon Tarts. Color photos.
