COMPOUND BUTTER
Makes about ¾ cup
These little logs transform the mundane into the sublime. Melt a pat onto a grilled steak, toss with roasted vegetables, or stir into hot pasta -- terrific!
INGREDIENTS
½ cup (1 stick) farm-fresh butter, at room temperature
¼ cup tender herbs, such as chives, tarragon, parsley, chervil, or dill, or a combination, washed, dried, and finely chopped
1 shallot, finely minced
Salt
Freshly ground black pepper
STEP-BY-STEP
Combine the butter, herbs, shallot, and salt and pepper to taste in a small bowl, and mash with a large fork. Scrape the mixture onto the center of a length of waxed or parchment paper. Fold one side of the paper over the butter and roll to form a log. Wrap tightly in plastic wrap or aluminum foil and freeze. To use, slice coins from the frozen log.
STORAGE OPTIONS
Freeze: Keeps frozen for up to 6 months.

The recipes are really simple to follow and there are SO many! I even found a recipe to make green apple jelly, loved it because my grandma use to make this jelly but I never got her recipe... I have it now!

I have looked at every "preserving" book at every book store I have been to, and this one is definitely in the top 3. I like the way it is organized, directions and recipes are very simple. There are not a lot of fancy or odd combinations of ingredients, if that is what you are looking for.

It's not the same old how to do canning. They have great and different ways of preparing foods. Simple receipes with great results. If you had to have one book in your kitchen about canning... this is a must have.
