Charleston Cheese Dip
Serves 10.
½ cup mayonnaise
1 8-oz package cream cheese, softened
1 cup grated sharp Cheddar (about 4 oz)
½ cup grated Monterey Jack cheese (about 2 oz)
2 green onions, finely chopped
Dash of cayenne pepper
8 Ritz¨ crackers, crushed
8 slices bacon, cooked and crumbled
Preheat the oven to 350¡F. In a medium bowl, mix the mayo, cream cheese, Cheddar and Monterey Jack cheeses, onions and pepper. Transfer mixture to a shallow baking dish. Top with cracker crumbs and bake for 15 minutes. Remove pan from the oven; top with bacon. Serve immediately with corn chips, crackers or bagel chips.

I recieved this after I remembered to decline the featured selection, but it is a great cookbook. Features southern style cuisine. The crockpot mac-n-cheese was great!!! Every recipe I have made so far has turned out as expected. Also love all of the family photos, they made it much more personal than a standard cookbook. This is not something I would have purchased usually - but I am so glad I forgot to decline!

The crock pot macaroni and cheese recipe (which is great even when using skim milk) is worth the price of the book! Have passed this recipe on to others who ate it and loved it. Can't wait to try other recipes from the book.

I would highly recommend this cookbook to anyone. I have had the cookbook for about a month and have already used three of the recipes. They are quick, easy to follow, and delicious! Because I am from the south, I can relate to her stories of "back home," which are fun to read. Her recipes are typical of southern cooking and most of the recipes require what we typically keep in our pantries, without having to run out and buy tons of special stuff! I love this cookbook!!!!

I got this book because I forgot to decline, and I was pleasantly surprised at how much I love this. I found alot of the recipes similar to those of my family, so it brought back lots of happy memories of my times cooking with my mother and grandmother. I keep this cookbook close by and make things often, with my kids.
This is one of the best down home cookbooks around. I am glad I forgot to decline!

I got the book because I didn't decline it and was very pleased with it. I have made several of the recipes from the book and was very pleased as was my family! The breakfast skillet is great and was a hit for our Fathers Day Brunch!
