Classic Chocolate mousse???

I perused through this book went I got it. All the recipes seamed delicious and somehow special. I saw a Classic Chocolate Mousse recipe and I decided to make it for a Friday night-8-people-dinner. It seams to me that the author may have omitted a step, the recipe calls for eggs separated, any other cookbook calls for beating them separately (yolks and whites), but not this book. The recipe for the Classic Chocolate Mousse never tells you to beat the whites, nor to warm them up to kill any possible salmonella, it just tells you to mix the whites into the chocolate-yolk-mixture, how do you get volume???, yes the recipe calls for wiped cream, but I did not want to take my chances and have a runny mousse so, I followed my instincts and I beat the whites over a double boiler, then I mixed them to the chocolate-yolk-mixture. It was really good this way, the mousse had lots of volume. I do not know if you are really to "just" add the whites. If somebody figures it out let us know!

Beautiful book, great pictures, love the blueberry muffins- for a standard recipe these muffins are set apart from the rest . Also got a hard to find cookie recipe I have been looking for.
