Buttery Stone-Ground Grits
1 cup stone-ground or old-fashioned grits
1 tsp salt, plus more to taste
6 tbsp unsalted butter, cubed
3/4 cup heavy cream
Bring 4 cups of water to a boil in a medium pot. Slowly add the grits,
stirring constantly to avoid lumps. Add the salt; partially cover. Reduce
the heat to medium and cook for 15 minutes, stirring occasionally. Uncover
the pot and stir in the butter and 3 tablespoons of the cream. Continue to
stir, adding cream a few tablespoons at a time once the mixture thickens and
begins to sputter slightly. Add the cream until all of it has been combined,
about 15 more minutes. Taste and add more salt, if necessary.

I have tried some of the recipies and looked at the book
and found a lot I am going to try.
My Grandchildren likes what I have done so far.
Will do a lot more of them over the Holidays. I have a lot of company around that time.
I have also bought some of Paula's books as well as her Son's. Will continue to buy them if I think they are what I want so far so good.
