1 cup stone-ground or old-fashioned grits
1 tsp salt, plus more to taste
6 tbsp unsalted butter, cubed
3/4 cup heavy cream
Bring 4 cups of water to a boil in a medium pot. Slowly add the grits,
stirring constantly to avoid lumps. Add the salt; partially cover. Reduce
the heat to medium and cook for 15 minutes, stirring occasionally. Uncover
the pot and stir in the butter and 3 tablespoons of the cream. Continue to
stir, adding cream a few tablespoons at a time once the mixture thickens and
begins to sputter slightly. Add the cream until all of it has been combined,
about 15 more minutes. Taste and add more salt, if necessary.

The recipies are easy to make. They don't have a full page of ing. that you have to run out and buy. Their personal notes are great! I met the Deen Brothers in Savannah, GA last summer and they write just like they talk. Easy going and friendly. Thanks guys for another wonderful addition to my cook book collection!
