2 lbs rhubarb stalks, cut into 1" pieces
2 tbsp finely minced fresh ginger
2 1/2 cups sugar
2 cups flour
Pinch salt
14 tbsp (31/2 sticks) unsalted butter, cut into small pieces
Preheat oven to 350¡F.
Combine rhubarb and ginger in a medium bowl and mix well. Transfer to a large glass or ceramic baking dish. Sprinkle 2 cups of sugar over the rhubarb and set aside.
Whisk flour, salt, and remaining sugar together in a medium mixing bowl. Using a pastry cutter or two table knives, cut butter into flour mixture until it resembles coarse meal flecked with pea-size pieces of butter. Scatter mixture evenly over the rhubarb.
Bake for about 1 hour and 15 minutes, or until topping is golden-brown and rhubarb is soft. Set aside to cool slightly, then serve warm; or allow to cool to room temperature before serving.

Hello, this is a nice book with lots of stories, I bought at the 11.99 price, I will keep due to the fact that It would not be worth the charges to send back. I am sure someone will think this is a great book. I don't know if I will use much.
