Prosciutto Mozzarella Pinwheels
6-8 servings
Flour, for dusting
1 pound purchased pizza dough
2 cups shredded mozzarella cheese
7 ounces prosciutto, thinly sliced
1 cup coarsely chopped baby spinach (about 1 ½ ounces)
1 tablespoon olive oil
Kosher salt and freshly ground black pepper
Preheat the oven to 425 degrees F and position a rack in the lower third of the oven. Line a baking sheet with parchment paper.
On a lightly floured work surface, roll out the pizza dough into a 12- to 14-inch circle, about ¼ inch thick. Sprinkle half of the mozzarella over the dough. Arrange the prosciutto over the cheese in a single layer. Sprinkle with the chopped spinach, then top with the remaining cheese.
Roll the dough into a thick cylinder, gently tucking in the ends. Brush the entire roll with the olive oil and season with the salt and pepper. Place the dough, seam side down, on the baking sheet and bake for 25 minutes, or until the top is golden brown.
Cool the roll for 3 or 4 minutes, then use a serrated knife to cut it into ¾ inch-wide pieces.

I have two other cookbooks by Giada, and they are both better than this latest one. If you don't have any of the other books, you'll like this one. I felt like it was basically the same stuff from the previous cookbooks, just tweaked slightly.

I am so pleased with this book that I gave it to a friend's daughter for her first cookbook. She keeps it next to her bed and won't let anyone touch it. My only small complaint is that the print is so pale it's hard to read at times. It's the most beautiful cookbook I have and want to cook everything in it.

I JUST THE RECIPES IN GIADA'S COOKBOOK THEY ARE SIMPLE AND WONDERFUL WITH SIMPLE INGREDIENTS ,THAT MY FAMILY JUST LOVE. WE WATCH HER ON FOOD NETWORK BUT I LOVE BOOKS AND LOVE THE PICTURES OF THE FINISHED DISHES. I AM VERY HAPPY WITH MY CHOICE.

I ordered this and Rachel Ray's 365 No Repeat Cookbooks. I have to say that I was looking forward to the Rachel Ray book more than Giada's until I opened Giada's up. My Husband is Sicilian and loves his Italian food so I couldn't wait to use this book once I started looking thru it. Ingredients are very easy to find in the local markets here in California. The steps are easy to follow and the food comes out very tasty! I have made so many of Giada's recipes out of this book and have loved everyone of them. I really Love the Linguini Frittatas!!!!!!! I can't wait to buy another book by her. Sorry Rachel, but your book just didn't measure up to this one!
