I'm so glad that I've added this book to my already large collection of cookbooks. I found so recipes that I'd been looking for and unabel to find. There are many classics and quite a few really easy to prepare recipes that can easily be used for special occasions. This is a classy collection of great must-haves.

I got this book a while back and it is absolutely fantastic.. I plan on going to culinary school in Arizona and this book has everything that you need to get started with weights, measurements and everything in between..It's a great resource book.. Thank you "Culinary Institute OF America"!!

I have old favorites, but this is my favorite newer cook book. I didn't plan to purchase it. I forget to refuse it and I am so glad that I did. The instructions are clear and interesting reading and so far every recipe has exceeding my expectations.

I don't understand the negative reviews here, because this book is one of the best cookbooks on the market today. This is for people that actually like making real food, not shortcut overprocessed overly kid friendly junk. A CIA classic!

I ordered this book and was disappointed when it arrived. I flipped through and really had nothing jump out at me that sounded worthwhile. Maybe I'm not a "chef" or that adventurous when it comes to foods. I like good, basic, home cooked meals...not the fancy stuff. I sent this one back and opted for a couple of others instead.
