William Yeoward: American Bar

The Shogun Old-Fashioned

This recipe is a variation on the Old Fashioned, the drink favored by Don Draper in “Mad Men.” It uses Japanese whiskey but it could be made with most other aged spirits, such as Scotch whiskey, Cognac, Rum, Tequila, or, of course, American bourbon. It’s simple, sophisticated – and strong! If you’re serving a powerful drink like this, you could follow the Connaught’s example and provide alongside it a jug of water flavored with orange, cucumber, and mint. Personally, I would recommend drinking the cocktail and the flavored water in equal parts.

50ml Japanese single malt whisky (Nikka Yoichi 1988)
10ml home-made sugar syrup
2 dashes Vintage Abbott’s Bitters (or Angostura bitters)

To garnish: “mist” of orange zest; twist of orange peel

Stir the ingredients over large chunks of ice in a mixing jug until you achieve the right balance of flavor and temperature. This will depend on the rate of dilution of the ice. Strain into a glass with plenty of ice, squeeze over a “mist” of orange zest and garnish with the twist of peel.
